A smoothie so thick, you eat it with a spoon! Once you dig into this rich smoothie bowl, you may never go back to sipping again.
The key to a good smoothie bowl is to make it extra thick and creamy. You can achieve this by using full fat coconut milk instead of watery almond milk, by adding a bit of almond butter, and by using frozen fruit instead of fresh.
We used frozen cherries, strawberries, and blueberries, but feel free to use frozen mango, frozen pineapple, or your other favorite fruits in the same proportions (about 2 cups of frozen fruit per cup of coconut milk).
You can use a fresh banana if you need to, but frozen works much better here, too. They make smoothies irresistibly rich and creamy, while helping to keep it nice and cold.
To make your smoothie bowl, simply blend up the frozen fruit with the almond butter and coconut milk in a high-speed blender. Once fully combined into a cold, creamy mixture, divide it between two bowls.
Now for the fun part: the toppings! We used shredded coconut, fresh berries, and flax seeds for topping, but feel free to add your favorite nuts, a sliced banana, a drizzle of your favorite nut or seed butter, a handful of homemade Paleo granola clusters, or a simple sprinkle of cinnamon.
Snap a picture for Instagram (it’ll be hard not to!), then grab a spoon and enjoy.
Tips:
- Store any leftovers in Mason jars and refrigerate for up to two days.
- To make this a sippable smoothie, simply add almond milk until it’s the consistency you like. Pour into a glass and drink up!

Ingredients
1 banana, frozen
1 cups frozen cherries
1 cups frozen berries
1 cups coconut milk
2 tbsp unsalted almond butter
Handful unsweetened shredded coconut, for topping
Fresh berries, for topping
2 tbsp flax seeds, for topping
Directions
Add all ingredients (through the almond butter) to a blender. Set to high speed for one minute, combining until creamy and smooth.
Pour evenly into 2 bowls and top with shredded coconut, fresh berries, and flax seeds. Grab a spoon and dig in!
