Need a pick-me-up snack? These protein-filled energy balls are a tasty way to curb your hunger!
You don’t need to buy packaged protein bars to keep you going in between meals. In fact, even seemingly healthy brands use unhealthy sweeteners and additives in their bars.
Instead, we encourage you to roll up your own energy balls made with whole, healthy ingredients. These cashew balls are no-bake, and use chill time in the fridge to achieve a chewy, creamy consistency similar to cookie dough.
Start by processing cashew butter, dates, cashews, and unsweetened shredded coconut in a high-powered food processor or blender. To help cut back on prep time, you can even add the cashews first to get them into the consistency of your liking before adding the other ingredients. You can also mix by hand if that’s easier.
Use a tablespoon to scoop the dough out evenly, then roll into 10 balls. Set on a baking sheet and chill in the fridge for at least 30 minutes, or until the dough is just hardened. Roll the cashew butter balls in more shredded coconut, and serve. Store any leftovers in the refrigerator to grab for a quick on-the-go snack!
Tips:
- Don’t have cashew butter? Try almond butter instead.
- You can add chopped pecans, walnuts, or almonds for a little extra crunch. Just be sure not to blend until smooth!
- Add a dash of cinnamon, nutmeg, or even ginger for a little extra spice.

Ingredients
1 cups cashew butter (AIP - substitute with macadamia nut butter
1 cups Medjool dates, pitted
1/4 cups cashews, chopped (AIP - substitute with macadamia nuts)
1 1/2 cups finely shredded unsweetened coconut, divided
Directions
Add the cashew butter, dates, cashews, and 1 cup of the shredded coconut to a food processor. Blend just until a workable dough is formed.
Use a tablespoon to scoop the mixture out evenly. Roll into 10 balls. Chill in the refrigerator for at least 30 minutes.
Roll the balls in the remaining shredded coconut. Enjoy!
